TRUE MOMENT

 

I walked into my dark and dreary room, a cloudy day made it even more bleak.

I had been crying about the night before having suffered from the affliction of anxiety and panic.

So afraid that the feeling of the void of loneliness would come back and overtake my last breath.

My heart raced as my blood flow increased. An overwhelming freeze of my body, the sweat on my face, gave me signals that the attack was just down the hall (so, to sa.y)

I lit a candle to gain warmth for both my physical and mental well-being.  I observed the scent of the relaxing aroma of “Secret Garden.”

Focusing on the flame, I began to focus on my breath and count one, two, three, four; one, two, three, four.  Breathing in on one, out on two; breathing in on three, out on four.  Soon feeling the panic lifting and my dark room brighten.

I noticed the sun come through the break in my forest green satin curtains where they separate.  The reflection of my silhouette in the mirror on my dresser showing the glistening tears from my eyes.

Now I realize that what upset me I don not possess any power over, so I had to let it go.  Then the calm came over me.  I regained the warmth that I missed.

I took a drink of cold water and could feel the cool, cold thirst quenching liquid go down to my inner core.

I felt so refreshed!  I was no longer fearful, cold or worn out and beat.  My heart was not racing out of my chest.  So, I guess this was like a true moment of Zen.

Paleo White Chocolate Pie

In a month our lease will be up, and we decided to change things up a bit, and go to California for a while. We have friends and family in both northern and southern Cal, so it will be great catching up with them. One in particular is a very close friend from college (where Andy and I met). He was a professor of ours who became a mentor, and our closest personal friend. After we graduated Dr. Murphy was there with us at our wedding. He was the first person I called after each of our babies was born. Through thick and thin he has been our greatest supporter, guidance counselor and trusted friend. I love him so much.

We are also really looking forward to admiring the new landscape, and all the new (to us) parks, museums, beaches, farmers markets, and more. We will be staying in wine country, but also traveling up the coast when our new book comes out in October. But I’ll tell you more about that later. I can’t wait to meet you!!!

So yesterday I was looking in my cabinet, which we fondly referred to as “the chocolate cabinet” during the making of Paleo Chocolate Lovers. I was thinking that we only have 4 weeks left before we drive to California, and so I should use up my ingredients. The first one that caught my eye was cacao butter. And in an instant I knew what I wanted to make. White chocolate pie. Sigh.

Of course when this pie came out all heavenly-like I kind of wished I had done it sooner so I could have included it in the book. But oh well. That’s what always happens. And this way you get to enjoy the recipe right away.
White Chocolate Pie

dairy-free, Paleo, gluten-free
Paleo Pie Crust Ingredients

2 cup (224 g) almond flour
8 soft pitted Medjool dates
pinch of sea salt
Paleo Pie Ingredients

9 oz cacao butter
1 (13 oz) can full-fat coconut milk
1/4 cup honey
1 tablespoon vanilla extract
1 tablespoon grass-fed gelatin (I think agar powder would also work, but I haven’t tested it yet.)
Directions

1) Add the crust ingredients to the food processor fitted with the S blade, and puree until it begins to clump together.
2) Firmly press the crust into a 7″ springform pan, and set it aside.
Note: A larger springform pan or a pie dish would also work. Individual mason jars would also be sweet.
3) Bring the coconut milk to a simmer in a saucepan and slowly whisk in the gelatin, until it is completely dissolved. (This may take several minutes.)
4) Add the honey and vanilla to the coconut milk mixture, then transfer the liquids to the food processor or blender with a vent.
Note: The vent is crucial so that the heat can escape while pureeing.
5) Place the cacao butter in a bowl over a pot of barely simmering water. The water level should be a few inches below the bottom of the bowl. As soon as the butter is melted remove it from the heat, and add it to the other liquids.
6) Puree until smooth, then pour over the crust.
7) Refrigerate until set (at least a few hours).
8) To serve the pie heat a chefs knife in hot water, then run the knife between the pie and the wall of the pan. Remove the wall and reheat the knife to slice. Best eaten room temperature.

Note: The pie photographed whiter than it is in real life.

THREE DELUSIONAL SYNDROMES

Psychoanalysts are always studying show-cause brain reactions and responses. Those neurotransmitters with a short circuit seem to create new paths down the wrong cycle of functioning. When this occurs, it creates different reactions mentally to a person’s ability to think logically and without illusion to factual perception. The mystifying conduct of the three delusional syndromes “Capgras”, “Cotard” and “Prosopagnosia” seem to be half understood, and half reasoned.
Capgras syndrome cases believe the delusion that people close to them have been replaced by imposters. Other symptoms are seeing double persons, animals and objects. The person understands and knows that their perceptions are false. People usually involved are the ones closest to the ill-minded victim. One man though his father-in-law as rather mechanical in a cyber fashion and went so far as to cut his head off expecting to find memory chips in his head instead of a brain. Another story is of a man waking up and thought his wife was exchanged with an alien, and when questioning the identity of her, she reacted differently, which confirmed in his mind that she was indeed acting oddly.

On the other hand, Cotard’s syndrome sufferers come to believe that they are actually dead. One has the delusions of cotard seems to repeatedly try suicidal attempts due to the fact that they believe they are already immortal beings and can’t be killed. Another symptom one may express is that their limbs or body belong to someone else, so this goes back again to other self harm inflictions. An example is of a man stabbing himself over and over again to prove to others that they are actually already deceased and cannot be harmed.

A significant difference of the two above syndromes seems to be that depression follows with Cotard illness. Both are caused from damage to the right hemisphere of the brain and electroconvulsive therapy seems to help if that part of the brain has not been severely damaged or severed, such as in an automobile accident. Tricyclic antidepressants can help with depression of the sufferers, but has no effect on the delusional treatments. And I am by no means giving any advice on treatment this is up to the medical professionals.

There is an opposite mental illness called prosopagnosia, where such victims are unable to relate faces of a loved one or someone familiar, but still have emotional binds to that person’s name. They become antisocial because of the embarrassment of not being able to recognize people they have met before and should truly know. Such an entrapment in oneself. The three delusional syndromes seemed to be another fascinating value to how complex the brain’s functions are. One could say that the mind will always be a mystery in science that will never be fully exposed or can it be?
